Raw Beets

I just cut up some raw beets and threw them in tupperware in the fridge.

Should they be kept in a little bit of water/how long do they keep?

No idea--I usually wait until I'm ready to throw the dish together before I touch the beets. We store beets in the root cellar in layers of shavings or sawdust (since we have ample supply of both from the sawmill and wood workshop).

Always eat the greens--either in salad or with chard. I also put them in the juicer.
