Rec. Eggplant,Lemon Sauce

One of our favorites
You need
8 eggplant slices about 1/3 in. thick from a large eggplant
evoo
salt and freshly cracked pepper
smoked Mozzarella about 1/8 in. thick about 3-4oz in all
fresh basil for garnish
Brush eggplant slices on both sides with evoo, season with salt and pepper, place on baking sheet and Broil til lightly brown and tender, turn once. Arrange eggplant overlapping slightly in an oven proof serving platter. Top with the cheese and broil til cheese melts... Spoon sauce over eggplant. Garnish with basil serve right now :LOL:
Lemon Sauce:
1/4-c. evoo
2-Tab. lemon juice
2-Tab. chopped basil
2-Tab. chopped flat leaf parsley
salt and pepper to taste
In small bowl whisk together oil,lemon juice, basil, and parsley..Mix in salt and pepper..Whisk just before pouring over eggplant...ENJOY
