June - my mom used to make a dish somewhat similar to yours except for two differences - she just used breast pieces, & used Raspberry Vinegar in place of Red Wine Vinegar. While I've never been very fond of fruit in main dishes, I have to admit that I really do love Raspberry Vinegar with chicken.
