"Shambles" roast veg

Take the following in any amounts, or add your own.

Potatoes
carrots
onion
turnip
Parsnip

scrub or peel and cut into bite sized pieces. Put them in a baking tray.

Add
One garlic clove, finely sliced
Sprig of rosemary and thyme Chopped finely
Vegetable oil (enough to coat all the vegetables when mixed by hand and not lay in the bottom of the pan)
couple of glugs of Dark soy sauce.
S&P to taste.
heaped teaspoon of cane sugar


Go in with your hands and mix everything together, making sure all sides are coated.
Pre heat the oven to 400f and put in the veg (top of the oven) for about 30 minutes. Now turn the oven down to 350f and move the pan to the middle of the oven and cook for an additional 30/40 minutes.

Mix the veg when moving to the middle shelf

I also like to add any other left overs like mushrooms and tomatoe, but these must be added at the half way stage.

I have some on now, and the smell is driving me nuts lol.

Just a quick one
After the first 30 minutes they look cooked due to the dark soy sauce, but they will need the extra time. Just teste one
