Smothered Squash

SMOTHERED SQUASH
2 hamburger patties cooked and drained
1 zucchini sliced/halves
1 yellow squash – ditto
1 onion sliced half moons
2 cans diced stewed tomatoes – no salt added(!)
1 can cream of tomato soup

Put it all in big pot and bring slowly to a boil.

Stir and bury the squash in the sauce.

Submerge the hamburger patties and let simmer for 20 minutes.

Turn burgers and stir. Simmer until squash is done, approximately another 20 minutes.


Add seasoning to taste. I added a little thyme and some lite soy sauce for saltiness.

This makes a lot so I’ll get 2 meals with the patties, and still have plenty of veggies and sauce for the couple of beef steaks I got. Plus it’ll be even better for sitting in the fridge overnight.
 
Now I wish I had gotten those zucchinis at the farmers market this morning. I hit the market before we hit the festival and I got some green beans, Walla Walla onions, fresh cheese curds, Brie and fresh summer sausage that hasn't been cured. The cheeses and sausage were made down the Bitterroot Valley, just 10 miles away. YUM!!!
