1/4 cup finely chopped raw pecans
About 4 cups chopped spinach leaves or baby spinach
About 1 tsp minced or crushed garlic
1 tblsp cooking oil

Wash spinach well. Heat a pan with the oil on medium high heat. Add the pecans to the pan. Cook, stiring frequently until you can just start to smell the pecans, about 5 minutes. Add the garlic to the pan and stir. Cook 1 to 2 minutes, until garlic becomes fragrant. Add the spinach. Cook, stiring constantly until the spinach begins to darken and the edge just begins to wilt. Remove from heat immediately and serve.
