Stir Fried Potatoes Taste Burned

Hi:

I often dice up peeled potatoes and then stir fry them in a few table spoons of oil. Even though the potatoes are golden brown, they some how end up with a burned taste. Does anybody know what I may be doing wrong?

Sounds like your heat might be a little too high. Back off on the heat as the cooking starts. Alternatively, par boil the potatoes first and then stir-fry them on full heat. Also avoid butter as it burns at a lower temp than oil.
 
If you want to fry your potatoes raw, I always add a little oil to my butter. It helps to keep the butter from burning. If I have the time and think ahead I like to boil up my potatoes until just tender, cube them and fry them up in butter or margarine or a combination of the two.
