My dad gave me a huge red cabbage and didn't know what I was going to do with it. Then my mom reminded me of the red cabbage recipe she used to make. I haven't had it years.I made it tonight, brought back chilhood memories. Tasted so good. It is good hot or cold
This works good on top of the stove or in a crockpot, or I did it in the oven 350 covered tighten to seal in steam to help it cook. Cook until cabbage it done. I would say approx hour but check it as stoves are different and how thick you sliced it . My mother loves doing it in the crockpot.

Sweet and Sour Red Cabbage

1 Medium Red Cabbage shredded in a medium thinckness
1 Medium onion diced
2 apples diced small pieces
1 heaping Tbl Bacon Fat
1 Tsp salt
1/2 cup Sugar
1 Cup Cider Vinegar
1 1/2 cups water
1 bay leaf
2 whole allspice
2 Whole cloves
6 peppercorns
simmer until cabbage is tender (approx 1 1/2 hours)
If you like it with a thick sauce add cornstarch mixed with a lttle water till desired thickness.

I love red cabbage cooked like that let'scook, especially with pork and goose. (Goose maybe at Christmas, so very expensive here in the U.K.) I also love the lovely spicy smell when it is cooking. Thank you for reminding me.

It freezes well too :)
