TNT Broiled Tomatoes

These are yummy and go great with almost anything I like nice rare lamb chops or roast beef.See what you think.
Preheat oven to 300 Cut 4 large tomatoes in half and place in a shallow baking dish, cut side up and prick with a fork. Sprinkle with about a 1/4 cup of dry sherry allowing it to be absorbed into the pulp. Sprinkle with salt and pepper and about a tea of dry oregano. Place in oven for about 5 min. Remove from oven and turn heat to broil. Top tomatoes with a tab, each of mayo then dust with parmesan cheese. Broil til lightly browned. Serve immediatly.

tomatoes love cooking, whether broiled (great recipe up there!) roasted or pan fried (yes fried red tomatoes!) and go with all kinds of dishes from chops to fish. Leftovers make a quick pasta topping.
