Summer being here (we were at 95 degrees F today) I start thinking about summer food.

Here's my favorite corn recipe (measurements are approx):

4 ears of corn, boiled and kernels removed
1/4 c parmesan
1/3 c mayonaise
cayenne pepper to taste

I add the parmesan first to melt it.

I LOVE corn, this is my favorite recipe for it. Of course, canned corn can be used, in a pinch, if you don't have parmesan it is still good just with the mayo and cayenne.
 
I generally cook for one, so the other thing I like about this recipe is that I can make as much or little as I want without inconvenience. It does keep for a few days too.
 
:LOL: okay okay, not around here either but in my own defense, I'll eat it for breakfast too. :D
