We love these,they take time but it's worth it.
ONE THING: do not add salt and pepper til finished or the cream will curdle.
peel 4 large new potatoes and grate with the med side of a grater. Immediately place in top of a double boiler and pour 4 cups heavy cream over them.Now place 1/4 lb. of sweet butter on top. Cover and cook over boiling water for 30 min....Stir potatoes and, recover and cook over simmering water for 3 hours. check now and again the water level in bottom of pan.When cooked the potatoes will should be creamy and golden.Put in a warm serving dish and oass the salt and pepper.
