This is nice with chicken or steak or even a nice chop. Takes a little time, but the taste is great. I peel and then take a melon baler and scoop balls of potatoe and put into ice water that is salted.I use about 6 med potatoes. Just before cooking I dry them on paper towels. Heat 2Tab evoo and 4 Tab.butter in large skillet and cook potatoes without crowding. Shake and turn til potatoes and glazed and golden.about 20 min.sprinkle with salt and pepper,reduce heat to low and cover pan tightly and steam 15 min. Shake pan occasionally to prevent sticking. Before serving sprinkle with fresh parmesan and chopped fresh Italian parsley. If you prefer you can cut this into potatoe sticks instead.
