TNT Sweet and Sour Cabbage

I found this recipe and had to try it. I did't have a cabbage on hand but I
did have a bag of coleslaw mix so used that, and I had 1/2 of red onion and 1/2 of white onion to use up so i used both. rice vingar and white sugar

I thought this was great. I took a small container of it to my mom and it gone in no time. She loved it too. I will be making this again trying it with regular head of cabbage, but I really liked the coleslaw mix. It was done in no time where the regular cabbbage will take some time to cook.

Sweet and Sour Cabbage

2 to 3 teaspoons vegetable oil
5 slices of bacon, cut into small bits
1 cup of chopped onions
1 medium head of green cabbage, cored and cut into 1 inch pieces
¼ cup rice vinegar (or cider vinegar)
¼ cup sugar (or brown sugar)
3 Tablespoons low sodium soy sauce
Heat the oil in a heavy pot and cook the bacon until it is crisp.
Remove the bacon to a paper towel lined plate.
In the remaining drippings, sauté the onions and cabbage.
Stir frequently and cook for about 10 minutes until the cabbage is a bit wilted and has cooked down.
Combine the vinegar, sugar, and soy sauce in small bowl and then add it to the cabbage.
Cook the cabbage for an additional 10 minutes, or until it is softened but still a little firm. Stir in the bacon and serve.

That sounds good. I make a warm red cabbage side that uses current jelly, red wine vinegar, and caraway seeds. I believe it is Danish (and TaxLady probably has recipe that is better than mine).
