Between my son and I we have so many tomatoes, I find myself making something with them almost every day. I made this yesterday and it was very good. Even the little guys enjoyed it. I served it with lots of warm french bread and butter, grilled pork chops, garlic mashed potatoes. And of course dessert, Ice cream sandwiches.
So here is our latest tomato recipe:LOL:
Line a buttered 9x9 casserole with half of your 2 c. of seasoned bread crumbs..Now alternate layers of sliced tomatoes about 5 sliced, and 1 med white onion sliced thin and broken into rings. Dot this with 1/2 of a 1/2 c. butter.Mix 4-5 tab. of diced chives with a carton (12oz) of sour cream, spread the cream mix over the tomatos, and onion and sprinkle with the rest of the bread crumbs. Now use the remaining butter and dot the top. Bake ucovered in a 350 oven til golden brown and cooked through.
enjoy
