Warm spinach, potato, and onion salad

I made a great salad on a whim last night, and I thought I'd share:

Potatoes - 3 medium
Onions - 1 large
Portobello - 1 Cap
Garlic - 2 cloves
Tomato - 1
Spinach - 1 large handful
Merlot - 1 splash
Salt, pepper, parsley, butter (or cooking oil)
Bacon Bits (optional)

I just chopped up all of the veggies (all fresh from my local farmer's market), except the spinach which remained whole. I then fried the potatoes, onions, mushroom, and garlic in butter for about 15 minutes, adding the Merlot along the way and seasoning with salt, pepper, and parsley. I put the spinach and the tomato (both uncooked) in a bowl and topped it with the fried stuff and some bacon bits. It worked really well.

Just remove the bacon bits and you've got a great vegetarian meal. I think next time I'll replace the portobello with some hard boiled egg, as the mushroom didn't really add anything (though it wasn't out of place or anything).
