There are a host of sites that can give you good info on what you seek. I have made a cereal type of dish accidentaly while using pearl barley. I added too much to a batch of home-made turkey soup once and the consistancy was very much like cooked oatmeal. So with that knowledge, I can extrapolate a bit for you. Here's what I would try.
1 cup water
1/2 tsp salt
1/4 tsp. maple extract
1/4 cup Splenda (sucrolose)
1/2 cup pearl or rolled barley
Bring all ingredients except the barley to a boil. Add the barley and cook for ten minutes at a low simmer. Remove from heat and adjust the flavorings as needed.
Of course you could change the flavorings to anything from butter and brown sugar, with or without sinnamon, to vanilla sugar, to butterscotch, to blueberry, etc., whatever works with oatmeal. Hope that helps.
