This recipe is my mom's invention. When my eldest nephew was very little not only did he love the kugel, he loved to say the word, "kugel" and would make us laugh. It was not just his little voice but the inflection that he used that had us in stitches.

Betty Greene's Apple Noodle Kugel
Ingredients:
2 eggs
4 Tablespoons sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 cup grated apples
1/2 cup white raisins
1/2 cup ground walnuts or pecans
3 Tablespoons sweet margarine or sweet butter, melted (sweet means unsalted)
4 cups (8oz) broad noodles, cooked and drained

Directions:
Beat the eggs, sugar, salt and cinnamon together. Stir in the apples, raisins, nuts and butter. Turn into a greased baking dish. Bake in a 400 degree oven for 40 minutes or until lightly browned.

Notes:
This recipe even works with no yolk noodles.
Try to ensure all the raisins are submerged or they will burn--not good eats.
 
I come from a long line of good cooks and there was even a professional pastry chef in my family--although he passed before I was born. (This is the Hungarian side of my family)
