Can I sneak veggie into this risotto?

can I sneak a veggie into this risotto recipe and still have it come out good? What kind of veggie can I put in? baby spinache maybe? When would I add it?

Spinach
Artichoke hearts (not marinated)
Roasted red peppers
Calamata olives
Tomato, diced (seeds and gel removed)

I'd add them towards the end of cooking. The spinach just has to wilt and the others just need to be warmed up.

sure you can add a veggie to your risotto. With spinach, I would just stir the raw stuff into the cooked risotto before you add the last butter and cheese.

With the others, I would saute them and then stir them into the risotto towards the end of cooking time, so their flavor gets incorporated.

It must be cooler where you are than here in New York. No way could I possibly think of cooking risotto in this 100-degree heat!

I would use shrimp rather than chicken, & forget the saffron - but that's just my opinion. Veggies - mushrooms, asparagus or squash. I like the taste of risotto, & wouldn't add in much of anything else.
