Thought I would share a few of my favorite recipes I've created over the last couple years! Healthy hippy food!!
Kale and Brown Rice Salad
1/2 a cup of brown rice
½ cup lemon juice
2 cups kale, roughly chopped
2 tablespoons dried cranberries
1 tablespoon olive oil
1 yellow, red or orange pepper, chopped
¼ cup walnuts
one clove of garlic, minced
2 tablespoons flat leaf parsley, chopped
black pepper
Something I've learned about brown rice is to toast it before cooking. It is so tasty! Use a heavy-bottomed pan on medium heat, toast the rice until they smell roasty and a few grains begin to pop. Then cook as usual.
Cook the rice in water or vegetable stock.
Chop the pepper and garlic and add to a bowl with the lemon juice, olive oil, parsley and black pepper.
Steam or saute the kale (I prefer it lightly sauteed in a small amount of olive oil with lots of fresh ground pepper!)
Take the cooked rice off the stove and add to the bowl along with the cranberries, nuts, and kale.
It's a lovely salad warm or cold! Makes 2 main servings.
