Keeping fresh pasta fresh for a few hours
So I'm about to make some fresh tortellini, but I will not be cooking it until tonight, whats the best way to keep it? (no meat, just spinach and ricotta)

Just lay it out on tea towels til you are ready to cook it. If you have room in your fridge you can put it in there but you'll be fine if you leave it out.

i put mine in a foodsaver bag or a zip-lock bag. stir while cooking to prevent sticking.
you can freeze that pasta, too.
