Mediterranean Couscous

I got this recipe from my aunt and I think it has become my favorite way to prepare couscous. Just thought I'd share it with you all:

2 bell peppers (diced)
2 cups couscous
1/4 cup olive oil
1/4 cup red wine vinegar
1/4 orange juice
1 T. cumin
1 pinch cayenne pepper
2 tomatoes (seeded, chopped)
1/2 cup kalamata olives (chopped)
2 green onions (diced)
1 minced garlic clove
1/4 cup pine nuts
1/4 cup cranberries
1/4 sliced almonds
Salt / pepper to taste

Prepare the couscous and then mix all together.

Sounds like a lot, but it is really good. :chef:
 
sounds great thanks for sharing....by the way what ever happened with your dinner for your friend?? did you post the end results.....?
 
Ahh, actually I was posting that with plenty of time in advance. That is actually tonight, :) I'll let you know how it goes. Planning for the cedar plank salmon with this couscous, a salad (or grilled asparagus), and pinot noir. So... I think it should turn out well.
