I was looking for a rice side dish to go with the steak we had the other night. I found this one Maria's Rice - Allrecipes. Not having all the ingredients I experimented with the recipe and came up with a good substitute.

2 cups uncooked rice ( I used jasmine)
1 large container Swanson's Beef Broth
2 cups water
2 packages Lipton Onion Soup Mix
1 stick margarine

Add the soup mix to the broth and water. Mix well. Spray 9x13 pan and put rice in pan. Pour liquid mix over rice and stir gently. Slice margarine and lay on top. Cover with foil and bake at 450 for 30 mins. Uncover and stir. Bake for 30 more mins. Check after 15 mins and add more water if too dry.

We really liked the way it came out.

Then last night I made teryaki chicken. Did the same procedure but traded chicken broth for beef and Knorr's vegetable soup mix for the onion soup. It came out pretty good but I think next time I'll add some garlic and onion to the veggies for a bit more flavor.

It was so easy and a nice change from our usual rice side dishes.
