So many lentils...

& so few recipes of my own.

(besides soup & a vegetarian lentil dish.)

if you've recipes i'd appreciate them.

We used to make a lentil version of shepherds pie. We no longer have the recipe - but it is basically a savoury lentil and vegetable mix topped by mashed potato and baked in the oven.

alton brown had a great show on lentils.

you can make them into cookies.

Lentil salad is great and you can keep it in the fridge and snack on it. I just add whatever veggies I have to cooked lentils and pour a salad dressing over - often just a evo and vinegar dressing. The longer it stands the better as the flavour gets better with time. I sometimes add feta as well.
