Chicken Enchilada Casserola
1 cup chopped onion
1/2 cup chopped green pepper 2 Tbsp butter 2 Cups chopped chicken or turkey 14 oz green chilli peppers-rinsed seeded and chopped 12- 6in tortillas 3 Tbsp butter 1/4 cup flour 1 tsp ground coriander seed 3/4 tsp salt 2 1/2 cups chicken broth 1 cup sour cream 1 1/2 cup shredded monterey jack cheese In pan, cook onions and green pepper with the 2 TBSP butter. Combine in a bowl with chicken and chilli peppers. set aside. in same sauce pan, met 3 TBSP butter blend in flour coriander seed and salt. stir in chicken broth all at once. coko and stir till thinkened and bubbly. remove from heat. stir in sour cream and 1/2 cup of cheese. stir 1/2 cup of sauce in to chicken. dip each tortilla into remainig sauce to soften. fill each with 1/4 cup of chicken mixture. roll up. arrange rolls in a 13x9x2 baking dish. pour remaining sauce over. sprinkle with remaining cheese. bake uncovered in 350 degree oven for about 25 minutes till bubbles. if any of this sounds confusing let me know. .. the recipe is worded very weird. lol just thought i'd share :)
