large flour tortillas
boneless, skinless chicken breast
seeded, diced roma tomatoes
chopped green chiles
ground sage
rosemary
seasalt
finely-ground black pepper
montery-jack cheese, finely shredded
butter
*optional- guacamole and minced onion

poach chicken breast in water, sage, rosemary, seasalt and black pepper.
when done, shred using fork. don't overcook!
re-season to taste.
lay tortilla flat. spoon chicken mixture into center of tortillas. sprinkle with plenty of cheese. spoon chiles over or along edge of chicken mixture. sprinkle tomato over. add minced onion, if you'd like.
fold up; meanwhile heat butter sizzling hot.
lay folded roll into pan; fry till golden brown, then turn and finish other side.
slice in half diagonallay when presenting this dish.
serve with guacamole.

I make almost that same thing!
(minus the sage and rosemary)
I also use pepper jack and minced tomatoes (not too many or it gets too moist)
and I fry it in grapeseed oil.

(My kids love this method of frying, only their fav thing inside is leftover spaghetti sauce with ground beef)

and i KNEW i forgot something in the post; i didn't put the tomato in. i'll have to go fix that.
