So I was bragging about this buffet-style recipe yesterday, because it looked perfect. nu uh. Here is the original one that was provided http://www.recipezaar.com/bb/viewtopic.zsp?t=139471 . Too much mayo, not enough SCM. But, I realized as I was thinking about the ingredients, it needed a little tweaking. Here is how I ended up making it.
3 chicken breasts, cut up bite-size
Batter:
2 eggs
1 cup flour
1 cup water
2 T toasted walnuts, crushed
2 T hoisin sauce (optional)
dash of salt
Sauce:
1/2 cup Miracle Whip- mayo not sweet enough
3/4 cup sweetened condensed milk
1 cup reduced-fat milk
3 tsp cornstarch
crushed walnuts to taste
dash of salt
Combine batter ingredients and add chicken, add a few walnuts, then set aside for 10 minutes. Deep fry chicken turning occasionally until golden. In medium saucepan combine sauce ingredients. Cook over low heat, stirring constantly, until thick and bubbly. Place chicken in baking dish and pour sauce over, bake 350 10 minutes.
I think this turned out ok, but the sauce is not as thick, glossy, and semi-translucent. Any suggestions?
