Having returned from the far east i have an increased appreciation for dim sum.

What are the best books for understanding and making all the varieties , i.e char siew pao
 
To me dim sum is most charactorized by the various steamed dumplings. Buy some won ton wrappers and have fun with the fillings and ways of folding them. Char Siu to me ... well, if I want it I go to an Asian grocer and buy a pre-made marinade. There are so many available.
