Flautas! Or, how to while away the evening....

When my wife is out of town, I like to cook something different..
Keeps me out of trouble, ha ha!

This time, I decided to use up my left over flour tortillas.
I was going to make Taquitos, but apparently those are with corn tortillas.
They have a carnitas style pulled pork filling and a mix of Montery Jack &
cheddar cheese filling.
The dips are a simple salsa and a sour cream guacamole.

They came out pretty good!
 
Those look really good!! Can you explain how you cooked them? deep fryer or pan fry? how did you get them to stay closed while you cooked them? thanks!
 
Well, i used 8 inch tortillas, cut in half. Turns out 8 inches is too big, cut
in half is almost too small!
I put a layer of cheddar and montery jack cheese on the tortilla, then some
of the meat mixture. Rolled them up nice and tight, starting from the big end.
To keep them closed I used a secret kitchen device.... Half a toothpick!

I tried one in the oven... not too good. So they got fried in canola oil until light brown.
I put a scant 1/2 inch of oil in a frying pan. Probably around 300 degrees or so.
Doesn't take very long at all, 2 minutes max. They aren't super crispy. I was hungry at 11pm, LOL!
 
I used to make Chicken Flautas fairly often. I love them. Don't know quite why I stopped making them....

hmmmmmm maybe next week. I will have some chicken left over from the New Years chicken. :chef:
