Washing Up
Okay - so this isn't an "authentic" Indian dish, but boy did it go over big with yesterday's grilled Tandoori Chicken.
1 box Zatarain's Yellow Rice mix
1/2 bag frozen chopped spinach
1 can rinsed & drained Chickpeas/Garbanzo beans
Ground cayenne pepper to taste
Start rice mix per box instructions. Halfway thru cooking time, add frozen spinach. Stir & continue cooking. Shortly before rice is done, add chickpeas & sprinkle in cayenne to taste.
Stir & serve as soon as rice is tender & all is heated through.
