I love pork in any way shape or form.I have attempted to make carnitas several times useing differant methods and recipes and have yet to be satisfied with the results.Is a copper pot really needed to make it authentic?I would also like to learn how to render fresh pork lard, as the junk you buy in the store is flavorless.I know it's a very unhealthy dish but it's so good.
 
Michael, you have again inspired me, and gi ven me a new technique to try. I lvoe this place.:chef: Carnita's, here I come, at least in the near future.
