Amseccia, I live within spitting distance of WI (in the IL/IA/WI tip of IL) and do hear all sorts of "you have to include this" or "you can't put THAT in". As a matter of fact, my introduction to it was probably in Wisconsin! Another argument I've heard is for or against peas. I guess the real thing is that this is a high-starch meal. Diabetics need not apply! I was taken to a place that was only open a couple days a week, and that was pretty much all they served. I ate one and brought one home for hubby, who'd just been diagnosed with diabetes and one look ... well, he loved it, but we won't be eating it again any time soon. Again, like most peasant meals, it is meant to fuel a hard day's work and use what is available, stretch the expensive ingredients (usually the mat, and not a gourmet treat!
