Kare Kare (oxtail in peanut stew)

I have been looking for an excuse to dabble in Oxtail. My local Food Lion always has it on manager's special (usually less than $1/lb) because no one knows what to do with it.

Question, Marc: Is that shrimp paste Alamang Guisado? (just confirming. I keep that in my pantry, but if you had a different variety in mind I'd happily go hunt it down - any excuse to add to my oriental seasoning collection!)

Yup! thats the "alamang guisado" you can buy those raw or cooked. I prefer buying the raw and cook em myself. But it really saves time if you buy the cooked "alamang".
