Mexican Corn Bake

Mexican Corn Bake

Ingredients:
1 lb ground beef
minced onion
1 - 10 oz jar sliced mushrooms
1 - 15 oz can tomato sauce
1 can Rotel tomatoes
1 - 15 oz can corn
1 package corn muffin mix

Directions:
Brown ground beef with minced onion in a skillet. Drain if there is fat in the skillet. Add mushrooms, tomato sauce, Rotel and corn. Cook until warm. Prepare muffin mix as directed on the box. Put beef mixture into a square casserole dish and top with muffin mix. Bake according to directions on the muffin mix box. Serve hot.
Makes 4 servings.
