Pork/Shrimp Stuffed Cukes Appetizer

Way back when I had a wok, this was one of my fave easy appetizers. If you don't have a wok, steam the stuffed cukes on a rack/steamer basket over boiling water - the water should not touch the basket.

One large cuke or about three small cukes
3/4 lb ground pork (ground chicken or turkey will work too)
1/4 lb shrimp peeled (devein if you wish), & minced
soy sauce, to taste
1 scallion, chopped finely (tops and bottom)
crushed red pepper flakes, to taste (I don't like too much heat so I use about 1/4 tsp)
1 clove garlic finely minced

Rinse your cukes. I use a veggie peeler and peel the cuke(s) lengthwise for a striped effect. Slice the cukes horizontally into about 1 1/2 to 2" in height. Scoop out the insides leaving about a 1/4" skin.

Combine the minced shrimp, pork (chicken or turkey) w soy sauce, scallion, red pepper flakes & minced garlic.

Fill the cuke slices with mixture, Cover & steam bout 10-15 mins until pork/shrimpmixture is cooked through.

Added note: If you don't have a wok or time to steam, lol - another fave stuffed cuke appy is smoked salmon & cream cheese & dill.
