Hi, all. To get more protein, I want to start having miso soup for breakfast. I bought some dried shiitake mushrooms, but I don't always have time to rehydrate them to make soup in the morning. Can I rehydrate them the night before and keep them in the fridge overnight? Even better , can I make a week's worth of miso soup at the beginning of the week and heat it up every morning? Here's the recipe I'm using (and adapting somewhat): http://steamykitchen.com/blog/2007/05/20/simple-10-minute-miso-soup/
TIA.
