Adding spinach leaves to existing sandwich spread
If I'm making a sandwich spread from diced cucumber, mayonnaise, lemon juice, dill and salt and I want to include roughly chopped fresh spinach leaves, ought they be cooked first? I intend to steam them, if I'm going to cook them. Does it enhance or damage the flavour?

wilted spinach is a different flavor, not at all like fresh spinach IMO. I eat fresh spinach all the time, in salad or on sandwiches mostly.

I would chop the spinach raw and incorporate it into the mix, or just layer the whole leaves raw on the sandwich

Raw leaves...or incorporate them into the spread... is what I would do.

This is one of the few places where I would use frozen chopped spinach.

Spinach is magnificent freshly chopped or whole leaves. Sorry, Jennyema, but the only thing I use the frozen for is spinach dip. I know I'm late on this, but it's my 2 cents.

I'd put the fresh leaves on the sandwich. It sounds like a great spread.

Steaming will change both the flavor and the texture. For what you propose - I would just use chopped raw spinach to get the "fresh" flavor to match with the fresh flavor components of the cucumber and dill.
