Some ideas for additions: Fresh mozzarella (preferably smoked) or soft goat cheese, pesto, smoked turkey or grilled chicken, grilled eggplant, black olives...

You can always use different types of bread to change up the sandwich somewhat

cheese add chipotle
I suggest some chipotles coz it really goes great with the roasted tomatoes..and some mozzarella cheese coz it melts so good
