You'er going to hate me. I have my tried and tested recipe, but unfortunately it's metric. I'll post as is and if you need help to translate the measurements, I'll see if I can help!

3/4 cup plain flour
1 teaspoon salt
1 egg
250ml milk
50 ml cold water

Sift flour and salt. Combine milk and water. Make a well in the middle of flour. Break egg and add to the flour. With a wooden spoon, stir carefully from the centre, working the flour into the egg, and gradually adding the milk and water. Stand in a cool place for 30 minutes. Put a little butter in a frying pan, when melted pour in 3-4 tablespoons of batter. Cook gently until set on top. Turn and cook for a few more seconds.

Sprinkle with lemon juice and sugar, roll up to serve.

Can be filled with warm jam, golden or maple syrup or works as a savoury pancake as well.
