Lunch Sandwich Idea-TNT

My girls will be here for luch today and I plan to fix them a favorite sandwich.. They love roasted red peppers so on french rolls brushed on one side with evoo, I plan to layer on some roasted peppers, some jack cheese slices,and some italian salami, on the other slice of the roll spread on a small amount of a garlic mayo, put this under the broiler, to melt the cheese, take out and top with a some salad greens I am also thinking of adding a slice of fried eggplant to this as I put it in the broiler should liven it up a little...

I plan to make my sandwitch with several slices of the eggplant and slices of the cheese, no meat just the veggies I love this sandwich this way...I could eat fried eggplant at least once a week
