Beef and pork cuts get simplified names

Some of those "new" names have been in use for some time.

You can probably find a coulette steak in a Julia Child cookbook.
 
Sometimes it does get confusing. I'm sure the old names were easily understood when you had a population more familiar with the butchering process than most folks are today.
 
I think this is stupid and it really irritates me
