As I have not set any "standards" other than trying to make a light, fluffy cake, I believe I will try cake flour..

Thank you so much for pointing out that I responded to a post which was not directed to me...

Actually I responded because I'm pretty certain that my "standards" would allow me to use a product suggested by another forum member..
