I made a casserole tonight using purple potatoes. It had ground turkey, a little tofu, sliced mushrooms, cream of mushroom soup & mashed potatoes.

It was so weird eating this because all night I felt like I was eating candy since the potatoes were purple!:LOL:

 
I had heard of purple potatoes before, but I thought you could only get them at fancy grocery stores. I actually found these at Costco! 4.99 for a 7 lb. bag. They taste exactly like regular potatoes, which means, they don't really taste like anything unless you season them. :) I have heard they have more nutrients than regular potatoes (colorful veggies). Don't know if it's true or not, but hopefully.

Funny, I made a breakfast skillet for stepson and he asked me if they were chinese 1000 year old eggs. Which are purple too (but not 1000 years old):LOL:
