Blue Ridge pancakes

1 1/2 cups of flour
3/4 cup of stone ground yellow cornmeal
2 heaping teaspoons of baking powder
1 teaspoon of salt
1 tablespoon sugar
1/4 teaspoon baking soda

2 cups buttermilk
2 beaten eggs
1/4 cup of canola oil ( you could use bacon grease)

mix and fry as usual

Life is too short to eat bad food.

Csalt, as I recall, in England pancakes are what we would call crepe's here in America. For those type of pancakes I usually like a bit of butter and some powdered (confectionary) sugar, but for the other type of fat pancake I like maple syrup for my topping, but also love them stuffed with blueberries.
