kudzu is a edible plant (weed) that is a problem in the southern states
"Every part of the Kudzu plant is usable. Try young Kudzu leaves in place of spinach. Deep fried Kudzu leaves are like potato chips. Do a pot of rolled stuffed Kudzu leaves instead of using cabbage... Use the root powder in place of cornstarch and for frying squash or other vegetables....... Make Kudzu wine" http://home.att.net/~ejlinton/jelly.html
