Well Some of you know I partake in an Adopt a Ship program with the US Navy I went out to Naples Italy in April.

But On Tuesday I will be...

off yet again to join the Crew at JFC (joint Forces Command) In Naples Italy. I am looking forward to the weather site seeing, food and Oh ya teaching the boys.

Over the next 2 weeks the CS's (Culinary Specialist) will be getting their assesments done for the ACF certification program. I am truly pleased that they have come along so far over the past few months emailing me at all hours of the day asking me questions, calling me on the phone to ask about cakes etc. I have this feeling of acheivement even though I really havent done much!

Myself, and three other chefs will be out in Italy teaching and performing evaluations. I am only staying one week this time so I have a lot to get through in such little time!!

Below is the schedule that I personally will be teaching:

Peachy Parfait
Soufflés –Chocolate Chili Soufflés

Custards
-Egg Custard Tarts
-Pudding
-Mousse
-Brownies

Lemon Poppy seed Cake
Coffee Cake
Chocolate Truffle Cake

Cookies
-Gingerbread
-Shortbread
-Sugar

Boston Cream Pie
Pecan Pie
Pumpkin Pie

Scones

Icings-- Various icings and glazes
Decoration--Practicing Cake, tart and animation decoration

Its a heck of a lot to get through in 5 days but I have nothing but confidence. I shall post pictures and updates as my week goes on!
