Andy, if you don't have Herbes de Provence, just use a combination of complimentary herbs, i.e. Sage, Rosemary, Parsley, Thyme, etc.​

A typical Herbes de Provence will include rosemary, thyme, lavender, and marjoram. But, herbes de provence translates to provencal herbs (traditionally it refered to the local herbs from Provence in France) so you can use whatever herbs are fresh and local.​

Herb Roasted Pork Tenderloin with a Porcini Mushroom and Cognac Cream Sauce

Yield: Approx 6-8 Servings

Ingredients:

1/2 cup extra virgin olive oil
1/2 cup herbes de Provence
4 cloves garlic, minced
3 pounds pork tenderloin
1/2 cup dried porcini mushrooms
1 cup boiling water
1/2 cup cognac
1 lemon, juiced
3 shallot, thinly sliced
1/2 cup heavy cream
1/4 cup unsalted butter,
chilled and cut into small cubes
2 tablespoons honey
coarse salt and ground black
pepper to taste​


Directions

1 In a large measuring cup, mix together olive oil,
herbes de Provence, and garlic. Place tenderloin in a large,
rectangular baking pan. Pour olive oil mixture over meat, and turn
to coat. Cover, and refrigerate for 3 hours.​

2 Preheat oven to 400 degrees F (200 degrees C). Soak
mushrooms in boiling hot water for 10 minutes to rehydrate.​

3 Heat a large skillet over high heat. Remove meat from
marinade, and discard any remaining marinade. Place meat in hot
pan, and brown evenly. Return meat to baking dish.​

4 Cook tenderloin in preheated oven about 15 to 20
minutes, or until the internal temperature of the meat is 150
degrees F (65 degrees C). Remove from oven, and allow it to
rest for 5 minutes before slicing.​

5 Meanwhile, combine the water in which the mushrooms
were soaked, cognac, lemon juice, and shallots in a
saucepan. Cook over medium heat until liquid is almost gone.
Pour in the cream. Bring to a boil, and then reduce heat to
medium-low. Chop mushrooms, and stir into the sauce. Continue
cooking until the sauce thickens. Stir in the butter and honey. Season to taste with salt and pepper. Serve over sliced tenderloin.​
 
Wheat Chex with sliced banana for breakfast

Boss and I went out for leisurely lunch. Beef enchiladas with black beans and rice. We split a killer dessert - small dark choc bundt-like cake with oodles of whipped cream and caramel sauce w/a glob of vanilla ice cream. (Skipping entree at this restaurant next time!)

coupla glasses of wine when I got home from work and chatted with you all.

bowl of Shredded Wheat for dinner.
 
A couple cups of decaf coffee with cream and sugar for breakfast.
Bottled water while working out.
2 gummy worms for a boost to take my son to the park before lunch.
4 egg whites and a half of a piece of wheat toast with butter and grape jelly.
Iced coffee with nonfat milk and sugar.
Trying to drink some water now......I just have a hard time drinking water:mellow: .
Dinner will be a glass of red wine and maybe some butter bowtie pasta with freshly grated parm and fresh basil.
Treat before bed - those of you who know me - whisky:) :) !

a ham, grey poupon. and crushed dorito sandwich on white bread for breakfast.

mediterranean style lamb shank over orzo, with a bowl of lobster bisque for lunch at the parkway diner. (i know, diner food? but it was really very good.)

a half gallon of gatorade, and a few diet cokes whilst i was bloodletting myself pruning, weeding, and mulching the rose bushes.

boneless spareribs and steamed kung pao chicken, sauce on the side, for dinner.

But I remember what you posted in that thread about what was the most you ever ate, so I guess this would be considered a light day huh?
 
lol, not too light.

sometimes i get too busy to eat, so i make up for it the next day. today was a makeup day. i know that's really unhealthy, but whacha gonna do? i love to eat, and would rather starve myself until i'm able to sit down, relax, and really enjoy my food, rather than jam small amounts of hurried nutrition into my pie-hole.
 
June 24/o6 Today so far I have had:

1 orange
3 glasses of ice water
I glass of cranberry juice
3 scones
1 veggi dog with 1 piece of multi grain bread
1 piece of bread with cheese
1 cookie

Steel cut oats with different kinds of sugar and some nuts and raisons, coffee with cream, an apple, a mini grilled pb&j (1/4 size sandwhich), a small peice of angel food cake, a medium spoonful of peanut-butter straight from the jar. Oh, and 1/2 cup egg starts plus 1/2 can green beans. Still havn't had dinner.
