Who was that chef from louisiana, had a pbs show years ago...

I remember a good 20 years ago, there was this cooking show on PBS. The guy was older, i think he had glasses , moustache heavy southern accent. Always cooked fish, burned it then said " its ok, i like it that way ...."and also made sound effects like " hoooweee " as he was cooking. He also kinda mumbled so hard to understand %100 what he was saying.

I was too young to even cook at the time, I just got a kick out of watching him. And I was sitting around thinking about it , and figured someone around here would help me.

Yeah, he was great. Justin Wilson, the cajun cook.
Used to call cayenne pepper K-9 pepper.
 
the first time i ever saw a deep fried turkey was on one of justin wilson's show. i'll gal-ron-tee it.

i vaguely remember him warning about the method, then of course, it boiled over as soon as he lowered the bird in. it was a very funny episode.
 
My favorite of Justin Wilson was when he'd add wine to a dish.
"One cuppa waaaaaaan, two cuppa waaaaannn.... oh why not three cupppa waaaann"
