Did something different with some pumpkin seeds today

I had about one cup of toasted pumpkin seeds left today after toasting them this morning, then nibbling all day. I finally made some Honey-Roasted Pumpkin seeds.

I too about 1/6 c sugar, a scant 1/4 t salt, the seeds, 1 t oil, and 1 T each of water and honey. I brought the oil, water, and honey to a boil. Then I added the seeds and simmered for a minute or so. While that was cooking, I mixed the sugar and salt. Once the seeds had simmered a bit, I tossed them, liquid and all, with the sugar/salt mixture. Finally, I spread them out on some foil and let them set up. Not quite honey-roasted peanuts, but they're good!
 
darn, I am out of pumpkin seeds! Maybe I can salvage a few pumpkins at the store! This sounds yummy!
 
If you've got a big Super Wally-World nearby, try looking where they keep all the exotic imports, like crystallized ginger, craisins, elephant garlic, or where all the nut and trail mixes are. Odds are, you'll find a small package of pumpkin seeds in there.
