Boiling potatoes...and other foods?

That makes sense. Thanks. So is the difference between bring to a boil first reduce to simmer and the tractor way only a form of one being faster than the other? And say did the tractor way ,got to simmer and rec. wanted me to cont. simmering would still have to keep eye on it to make sure it's simmering. Just making sure.

You should keep an eye on it simmering anyway and give it a stir now and then.
