I kind of prefer to use a deep-fryer, though I might try the large dutch over and thermometer method. Home deep fryers just never seem big enough or deep enough to me, unless you're using a big, outside fish or turkey fryer LOL. I usually re-use my oil as long as I'm cooking the same type of food. I have been lookng for better filter methods. I recently tried a couple coffee filters, and I can't seem to find any cheesecloth. Right now I'd love to whip ot the old fryer and have some fish and chips, but I don't think there is anywhere in my area I can get fish like cod or pollock
